Champagne's five sub-regions share a foundation of chalk, but the grapes do different work from one area to the next. Pinot Noir is prominent in the Montagne de Reims and the Aube, Meunier becomes more important along the Vallée de la Marne, and Chardonnay comes forward in the Côte des Blancs and Côte de Sézanne.
There is also a difference in how Champagne is made. Large houses blend across sub-regions and vintages to keep a consistent style. Grower producers work from their own vineyards, often tying a bottle more closely to one village. Both sit within the same appellation, but they offer different ways into Champagne.
