The Producer

Coizy Père et Fils has vinified and bottled its own cuvées since 1963. Champagne Coizy is a house in Trépail making sparkling cuvées.

Place

Trépail is a Premier Cru village in the Grande Montagne de Reims. Chardonnay makes up 90.5% of its vineyard, with Pinot Noir at 9.5%, a planting pattern that sets the village apart from surrounding Pinot Noir regions. Premier Cru is a village classification in Champagne, so it applies to Trépail as a village rather than to one named parcel.

Wines

Cuvée Eunomia is 50% Chardonnay, 30% Pinot Meunier and 20% Pinot Noir. Cuvée des Sacres and L'Eternel are 100% Chardonnay cuvées. L'Immortel is a very dry sparkling wine with fine mousse.

Cuvée Eunomia ages for 36 months in the cellar. Cuvée des Sacres ages for five years in the cellar after tirage, the bottling of the base wine with yeast and sugar for the second fermentation. Its vinification uses oak and stainless steel. Eunomia and Cuvée des Sacres are both dosed at 6 g/l, the sugar addition after disgorgement that fixes final sweetness.

Cuvée des Sacres offers great complexity, with refined oak followed by vanilla, pineapple and mango, then a lightly spiced finish. Its mousse, the bubble texture of sparkling wine, is well developed.
