The Negev is Israel's desert wine region, where desalination and drip irrigation support vineyards in an extremely arid place. Vineyards planted in southern Israel over the last decade sit alongside a wine tradition that reaches back to biblical times.

Sites lie at 600 to 1,000 metres in a desert continental climate. More than 300 days of sunshine, high daytime temperatures and intense solar radiation meet very low rainfall and dry air. The dry conditions reduce rot and disease risk, while warm days and cool nights help grapes ripen and retain freshness. Soils include loess, sandy loam and chalk.

Cabernet Sauvignon, Shiraz and Grenache are among the region's key grapes. Whites often show freshness, minerality and stone-fruit aromas; reds may show spice, elegance and a lively desert character. The Negev received official appellation recognition in 2026 and is described as the world's first desert wine region to receive PGI recognition.
