Negev

The Negev is Israel's desert wine region. Vineyards at 600 to 1,000 metres have dry conditions, strong sun and cooler nights, with desalination and drip irrigation supplying water. Cabernet Sauvignon, Shiraz and Grenache are important red grapes; white wines can have fresh acidity and stone-fruit aromas.

Negev vineyards grow in extremely dry conditions, supported by desalination and drip irrigation. Sites lie at 600 to 1,000 metres and receive more than 300 days of sunshine. Hot days and intense sunlight give way to cooler nights. Soils include loess, sandy loam and chalk. Cabernet Sauvignon, Shiraz and Grenache are important grapes. White wines can have fresh acidity and stone-fruit aromas, while reds may show spicy flavours. Modern vineyards continue an older regional winegrowing tradition. The Negev is recognised as a desert wine appellation.
