Winegrowing has a long history across the inhabited Aegean islands. Archaeology at Akrotiri and Homeric references point to that past, while production has revived in recent decades. The Aegean Sea PGI covers the inhabited islands except Evia and Crete, with whites such as Assyrtiko, Aidani, Athiri and Muscat.
Santorini is shaped by hot, dry summers, morning caldera mists, volcanic soils and vines trained in baskets or low gobelet forms against strong winds. Its dry Nykteri wines require at least 13.5% alcohol and three months in oak. Vinsanto, made from sun-dehydrated grapes, spends at least 24 months in oxidative maturation.
Limnos and Samos make Muscat-based sweet wines, while Paros makes barrel-aged Malvasia Paros from sun-dried Monemvassia and Assyrtiko. On Rhodes, higher Athiri plantings sit apart from lower Amorgiano or Mandilaria, and the island also produces sparkling wines with ripe fruit and freshness.
