L'Étoile is a small Jura appellation focused on white wines from Chardonnay and Savagnin. The village sits on limestone and marl. Some whites are kept away from air by topping up the vessels; others age with exposure to oxygen, including Vin Jaune. The name refers to the star-shaped fossil crinoids found in the local soils.
