Austral begins in Cautin province and extends south to the limit where soil and climate permit grape growing. It is a cool-climate region still finding its footing, with Cautin Valley, Osorno Valley and Chiloé as its legal subregions.
Riesling and Chardonnay are associated with Austral's white wines, which are described as elegant, mineral and low in alcohol. In Cautin, Chardonnay can show flinty, bready and citrusy notes in a medium-light, long style. Cautin Pinot Noir has been noted for earthy, herbal and dark-cherry character. Pinot Noir and Chardonnay also sit at the center of the wider southern wine movement.
An Osorno label may name Lago Ranco or Rio Bueno Valley, indicating a more specific area within Osorno. Across Austral, vineyards have developed alongside cattle farming. The region remains experimental rather than a settled, high-volume part of Chile's wine map.
