Tarija is Bolivia's principal wine region. Its vineyards sit in high inter-Andean valleys, where altitude provides a temperate growing environment despite the country's tropical latitude. In the Central Valley, vines grow at roughly 1,800 to 2,200 metres, under strong ultraviolet light and with cold southerly saurazo winds.

Tannat was first planted commercially in Bolivia here in 1999. Its wines are deeply coloured, rich and high in tannin. Syrah and Cabernet Sauvignon have been studied across four Central Valley zones, with different winemaking potential in each. Tarija also makes fruit-led wines with restrained oak, oak-aged Tannat and Cabernet, and high-altitude sparkling wine.

Moscatel de Alejandría is used for Singani, a Bolivian grape spirit produced in specified zones that include Tarija's Central Valley. It is separate from the region's still wines.
