Who makes it

Rainer Sauer began the estate with Helga Sauer in Escherndorf, a village in Franken whose slopes are central to the winery’s white wines. Daniel Sauer now owns the business, and his shared cellarmaster role with Rainer keeps the family connection close to each vintage and each bottle.

The estate joined the VDP in 2010. Its listed vineyards include Am Lumpen 1655, a VDP.Grosse Lage in Escherndorf; the classification identifies a named top site, while the bottle still has to show how Silvaner carries that site into aroma, texture and finish.

Where it grows

Escherndorf sits in Franken, where the Sauer estate works principally with white grapes. Its slopes form a sunny, wind-protected natural amphitheatre, a setting that supports ripening and gives Silvaner the conditions to move beyond simple fruit into a dry wine with weight and shape.

For the range, place is not a detached map reference. Estate-level Silvaner can present the house’s grape and dry style, while wines linked to Escherndorf and Am Lumpen 1655 narrow the focus to a named hillside and a more specific expression of fruit, acidity and mineral character.

How it is made

The cellar

A regional German wine authority reports that four hectares have been cultivated under strict biodynamic guidelines since 2008. This is a defined part of the vineyards, not a claim about every parcel, but it places close observation of soil and vine growth within the estate’s work and keeps farming connected to fruit quality before cellar decisions begin.

The supplied bottle material separates the cellar details of the 2023 Silvaner L trocken from those of the 2025 Silvaner Gutswein, so neither method should be treated as universal. What is clear across the estate’s leading grape is the intended result: dry Silvaner whose fruit, acidity, body and finish can register both vineyard source and bottle level.

What they make

Silvaner provides the range’s main line. At estate level, Silvaner Gutswein offers a broad introduction to the grape in a dry, food-ready form: fruit and acidity meet in a lighter framework, with enough body to keep the wine from reading as merely brisk.

Silvaner L trocken moves from the general estate tier to a named vineyard source. Its dry profile and bottle-specific vinification give it a more focused role, with fruit carried by a firmer mineral impression and a finish designed to hold beyond the first sip.

Wines to try

First bottle

Start with Silvaner L trocken, currently represented by the 2023 bottling. It is a dry Silvaner from a named vineyard source, placing it between the straightforward estate tier and the age-worthy Am Lumpen 1655 GG. That position makes its structure easy to read: fruit up front, acidity through the palate, mineral detail and a dry finish.
