The Producer

Nicolas Groffier uses whole cluster fermentation in the cellar. Stems stay with the grapes during fermentation, a technique that can bring perfume, spice and tannin. All the 2021 Robert Groffier wines used it.

Groffier is the grandson of Jules Groffier, who founded the domaine in the 1950s. Hand picked grapes ferment with indigenous yeasts, without fining or filtering. Since the 2014 vintage, the domaine has sold only half of annual production, ageing previous vintages in its cellars until they are judged ready to drink.

Chambolle-Musigny Premier Cru Les Amoureuses is a named climat, meaning a defined vineyard parcel, in Burgundy's Premier Cru hierarchy.
