The Producer

The Pinson family has farmed in Chablis continuously since 1640, making it one of the oldest producer families in the appellation. Charlène Pinson has been the winemaker since 2008, after earning a degree in viticulture and winemaking in Beaune and gaining experience in the Rhône.

The domaine works with organic methods and leaves the cellar open to different vessels. Some vineyards ferment in barrel, others in tank. Ageing uses older barrels and stainless steel, with no single approach applied across every wine.

Place

Chablis is a Burgundy appellation where vineyard names mark different levels within the hierarchy. Mont de Milieu and La Forêt are Premier Cru vineyards, while Les Clos is a Grand Cru vineyard. The classification changes the name on the bottle and identifies the vineyard level behind it.

Les Clos contains significant deposits of Kimmeridgian limestone. Across the range, the wines carry saline minerality and salty seashell notes associated with Chablis.

Wines

The named range includes Chablis Premier Cru Mont de Milieu, Chablis 1er Cru La Forêt, and Chablis Grand Cru Les Clos. Mont de Milieu shows pineapple, vanilla, and apricot, with a round, balanced palate and persistent flavour.

Les Clos 2022 is 100% Chardonnay from 1962 vines. Fermentation uses 80% stainless steel and 20% new barrels, followed by 15 months of ageing in barrels three to four years old. La Forêt adds another Premier Cru vineyard name to the range.
