Wines
Amarone della Valpolicella Classico and Valpolicella Ripasso Classico DOC Superiore occupy different Valpolicella styles. Amarone is made with grapes dried before fermentation, a process called appassimento that concentrates fruit and alcohol. In Cantina Levorato's Amarone, cherries in spirit, plum and cocoa lead to a broad, enveloping palate. The alcohol is well integrated, with firm yet smooth tannins, balanced acidity and a velvety texture.
Ripasso uses a second fermentation with Amarone pomace, the pressed grape skins left after Amarone production. That process can deepen colour and add weight. Cantina Levorato's Ripasso has 14% alcohol and a ruby red colour that deepens to garnet with violet reflections.
