Kherson lies in Ukraine's southern Black Sea wine region, alongside Odesa and Mykolaiv. Dryness defines its vineyard climate: evaporation is roughly 1.5 to 2.5 times annual precipitation, and even favorable years bring about 360 to 420 mm of rain. Dry spells can last 90 to 100 days. Historical records counted 21 droughts in Kherson province between 1799 and 1856.
The Russian invasion has severely damaged the region's wine infrastructure. Wineries in Kherson were occupied and looted, hundreds of hectares of vineyards were mined, and the country's largest wine-storage complex was lost during the war.
