Central Anatolia lies on Turkey's inland Anatolian plateau, where summers are hot and dry and winters cold and snowy. It contains more than one wine area. Cappadocia, with its volcanic soils, differs from the Kızılırmak-linked area around Kalecik.
Cappadocia is home to Emir, a native white grape planted mainly in Nevşehir Province. Its name means "ruler" or "lord." Emir makes straw-yellow wines with green reflections. They are dry and crisp, with high acidity and citrus and green-apple notes. The region also grows Hasandede, Narince, Kabarcık, Öküzgözü, Boğazkere, Kalecik Karası, Papazkarası and Dimrit. Producers work with these native grapes alongside Chardonnay, Sauvignon Blanc and Cabernet Sauvignon. Wine production is lower than in some Turkish regions because much of the grape crop is eaten or dried.
