San Luis Potosi's wine history reaches back to the Valle de San Francisco, where a wine-production reference appears in 1746. Records for Bledos, Gogorrón and Calderón followed in 1826 and 1840. Production then declined for several decades before the tradition returned to the high plateau around the capital at the start of the twentieth century.
Today, wine activity centres on the north-central Mexican Altiplano, around the capital and in Venado and Moctezuma. The region makes red, white and rose wines. Cava Quintanilla in Moctezuma has vineyards at 1,630 metres in a semi-desert setting, with deep clay soil high in minerals. The site reports wines with body, colour intensity and aromatic depth, and works with grapes including Cabernet Sauvignon, Merlot and Chardonnay. The state promotes tastings, dinners and pairing events.
