Guanajuato's wine region is spread across regional vineyards and wine routes rather than a single legally delimited appellation. Modern winemaking is young. A 2022 account put it at less than two decades old, with family projects, personal investment and real-estate ventures behind much of the activity.
Warm plains at high altitude set the conditions in the vineyard. Day-night temperature differences can exceed 20°C, while the semi-desert setting brings arid conditions and sandy soils with strong drainage. Climate, slope, altitude and rock all shape the soils, and a vineyard's position on a mountain can alter its microclimate. The grapes can retain freshness and acidity, producing wines with moderate alcohol and substantial ageing potential.
Cabernet Sauvignon and Pinot Noir can show intensified varietal character in local terroir. Orange wine has a recognised local place and requires specific organic production within a sector broadly focused on natural production. Wine tourism connects vineyard visits with the state's history in a landscape long associated with agave spirits.
