Kawachi is Osaka's main grape-growing area, at the foot of the Kongo Mountains. Its sunny vineyard slopes run down toward the Osaka Plain, with sandy loam over granite. The soils drain and ventilate well. Mountains block the monsoon, bringing warm, low-rainfall conditions that help grapes stay healthy through veraison.
Delaware leads production, and Osaka wine is mainly made from Delaware and other table-grape varieties. These wines tend toward concentrated fruit, mild acidity and moderate umami. Early-picked Delaware has a citrus-like freshness, while mature fruit brings a more concentrated sweet aroma. GI Osaka also permits varieties including Koshu, Muscat Bailey A, Chardonnay, Riesling, Sauvignon blanc, Syrah, Pinot Noir, Merlot and Cabernet Sauvignon. Its wines must use permitted grapes from the defined origin and be produced, stored and bottled in Osaka Prefecture.
