Saale-Unstrut takes its name from the two rivers. Most vineyards lie in their narrow valleys along the 51st parallel, although the protected area extends across Saxony-Anhalt, Thuringia and Brandenburg. It had 868 hectares and 34 named vineyard sites in 2025.
Sunny days, cool nights and long growing seasons produce fine-boned, lively wines with clear aromatics, though winter and spring frosts remain hazards. Shell limestone around Freyburg and Bad Kösen is associated with mineral freshness; red sandstone near Naumburg with warmer, spicier wines. Weißburgunder and Müller-Thurgau led the 2025 plantings, alongside Riesling, Silvaner, Bacchus and Dornfelder. The PDO includes white, rosé, sparkling and semi-sparkling wines. At Freyburger Schweigenberg, 90 vineyard houses built between 1700 and 1800 stand across five to ten terraces.
