Dons became Denmark's first protected designation of origin for wine in 2018. The DONS designation is for sparkling wine, while the estate also makes other styles. Its 853-hectare protected area follows meltwater gravel and sand in the Dons By cadastral area of Almind, whose boundaries have appeared on cadastral maps since 1821.
The vineyards lie in an Ice Age tunnel valley, 25 to 60 metres above sea level and about seven kilometres from Kolding Fjord. Hilly slopes and nutrient-poor heath sit over gravel and deep sand, with a water table far below the vines. The official grape list includes Solaris, Rondo, Regent, Pinot Noir, Zalas Perle, Cabernet Cortis, Orion and Madeleine Angevine. Dons sparkling wines have a higher lactic-acid content than classic sparkling wines, and the official account links their acidity profile to local conditions and hardy grape varieties.
