East of the Paphos mountains in western Cyprus, Vouni Panagias has vineyards at about 800 metres. Higher rainfall and a mild climate distinguish the mountain setting, where soils range from clay to gypsum. The route includes Pano Panagia, Chrysorrogiatissa, Statos-Agios Fotios, Galataria and Amargeti.
Xynisteri is the main local white grape. Its wines are aromatic and light in body, with green apple, peach and apricot notes. Maratheftiko can show red fruit, violets and roses, while Mavro is used for dark and rosé wines. Carignan Noir and Cabernet Sauvignon are also grown here.
The region's wines are now framed around fresh, fruit-forward dry styles. PDO Vouni Panagias-Ambelitis Xynisteri must contain at least 85 percent Xynisteri and reach at least 11 percent alcohol.
