Between Wijtschate, Westouter and Nieuwkerke, Heuvelland's vineyards follow south-facing, well-drained hills. Sandy-loam soils, iron sandstone and a deep groundwater table define the ground. The sandstone aids drainage and gives back stored daytime warmth after dark.
The growing season stays cool. The North Sea moderates winter cold, while cool nights extend ripening, allowing grapes to reach phenolic maturity while retaining acidity. Sparkling wines sit alongside other cool-climate bottlings. A regional tasting note names citrus, orange zest, blossom and stone fruit, followed by a crisp, mineral palate with fine acidity and relatively low alcohol.
Heuvellandse wijn is the region's protected designation of origin. A broad list of permitted white and red grapes means no one variety defines every bottle.
