The Producer

Philippe Chavy is a third generation Burgundian winegrower working among Puligny-Montrachet, Meursault and Saint-Aubin parcels. The domaine makes overwhelmingly white wine, while a simple Pinot Noir Bourgogne accounts for one percent of production. Chardonnay fills the named white range, including Bourgogne Chardonnay, Puligny-Montrachet, Meursault Les Narvaux and Saint-Aubin Premier Cru Les Murgers des Dents de Chien.

Two family lines feed the vineyards. Most Puligny vineyards were planted by his father in the 1950s, while the Meursault vineyards came through his mother's family line. Chavy works the soil by ploughing, with strictly no herbicides or insecticides, and follows lunar calendar cycles when determining work in the vineyards and cellars.

Place

Puligny-Montrachet, Meursault and Saint-Aubin are three communes in the domaine's white wine range. Their labels move from regional Bourgogne to village wines and a Premier Cru. Premier Cru is a vineyard classification inside a village appellation, so the name points to a more specific classified site than a regional Bourgogne label.

Wines

White wine fills almost the entire production. Bourgogne Chardonnay 2023 is the regional bottling. Puligny-Montrachet 2023 and Meursault Les Narvaux 2023 carry village names, while Saint-Aubin Premier Cru Les Murgers des Dents de Chien carries a Premier Cru vineyard designation. The red side is a simple Pinot Noir Bourgogne.

Production keeps the whites fresh in temperature controlled stainless steel tanks, and a pneumatic press handles the must gently and slowly. Oak aging is also used in maturation.

Bourgogne Chardonnay 2023 is pale yellow with a green tint, a stylish nose touched by coconut, a delicate palate without dilution and good length. Puligny-Montrachet 2023 is pale green, with attractive light fruit, no great weight or depth, and a balance suited to early drinking. Meursault Les Narvaux 2023 has a green streak on the nose, an abrupt opening, a fatter and fleshier mid palate, oak that is not yet integrated and mineral notes at the finish. Saint-Aubin Premier Cru Les Murgers des Dents de Chien shows a yellow robe with brilliant lustre, a nose with fresh herbaceous notes beside fruit, and a supple palate marked by mineral character.
