Domaine Olivier Morin is based in Chitry-le-Fort. Its two named wines are Coquette Bourgogne Pinot Noir and Tentation Crémant de Bourgogne Domaine Olivier Morin. Coquette is 100% Pinot Noir from the domaine's Chitry vineyards and nearby sites. Tentation is a sparkling Crémant de Bourgogne, placing a still red beside a sparkling wine in the range.
Place
Coquette draws from the domaine's Chitry vineyards and nearby sites, mostly on south to southeast facing slopes. The ground is marl, clay and Portlandian limestone, with soils similar to those of Chablis. This combination brings the cuvée a bright mineral character alongside ripe red fruit.
Wines
Coquette is the still Bourgogne Pinot Noir. The vines average 30 to 50 years of age, and the wine is aged in older demi muids through a solera style system, with a small portion of older vintages blended in each year. It shows ripe, juicy cherries, raspberries, red currant and light spice. Soft tannins and a mineral spine suit early drinking, while the wine can age 5 to 8 years as tannins soften and tertiary notes develop.
Tentation is the sparkling Crémant de Bourgogne, made from equal parts Chardonnay and Pinot Noir. It matures on its lees for 18 to 24 months.
