The Producer

One grape variety runs through Domaine Louis Moreau's vineyards: Chardonnay. The domaine makes white wines in Chablis, with bottles moving from Petit Chablis through Chablis, Premier Cru and Grand Cru.

Chardonnay stays constant while the appellation name changes. Petit Chablis and Chablis provide broader designations, while Premier Cru and Grand Cru identify higher vineyard categories within Chablis.

Place

Chablis is the Burgundy appellation where Domaine Louis Moreau works. Its four levels move from broader appellation names to higher vineyard classifications, placing Petit Chablis and Chablis below Premier Cru and Grand Cru on the label.

A Grand Cru is a classified vineyard category, while Premier Cru identifies the level below it. The hierarchy changes the geographical specificity and classification printed on the bottle, even when the grape remains Chardonnay.

Soil And Site

Chablis is described as a unique terroir for these vineyards. Individual soil types, slopes, exposures and parcels are unspecified, so the site description remains at appellation level.

Story

Since 2014, Louis Moreau has used stainless steel in the cellar, choosing neutral vessels to showcase mineral characteristics. Wild yeast and extended ageing accompany the change, bringing out more of the terroir's personality. Barrel ageing no longer supplies the primary stylistic influence. The cellar places mineral character and site expression ahead of oak influence.

Vineyards And Cellar

The estate vineyards are planted 100% to Chardonnay. A single grape variety keeps the fruit source consistent while appellation level and cellar choices separate the wines.

No vine age, parcel name, harvest practice or soil treatment is specified. The confirmed cellar choices are stainless steel, wild yeast and extended ageing, all used to preserve mineral characteristics and terroir personality.

Wines

The range includes Petit Chablis Louis Moreau 2023, Chablis 2025, Chablis Premier Cru Les Fourneaux 2023, Chablis Premier Cru Vau Ligneau 2022 and Chablis Grand Cru Valmur 2021.

Petit Chablis Louis Moreau carries the broadest designation in the range. Chablis occupies the central appellation level, while Les Fourneaux and Vau Ligneau name Premier Cru wines. Valmur carries the Grand Cru designation, the highest of the four Chablis levels. All are white wines connected by Chardonnay and separated by appellation category.

In The Glass

Petit Chablis opens with a fresh, very aromatic nose, extremely fruity with lemon, grapefruit, crunchy apple and wet stone. A pleasant initial attack leads into a round, fine palate that stays fresh, vibrant and mineral. The finish is long, with grapefruit and citrus zest.

Chablis Premier Cru Les Fourneaux moves from fruit toward flowers. Acacia and rose petals sit alongside light vanilla. Its palate is very round, with a touch of acidity preserving freshness, and the wine is subtle and fine.

A Bottle To Understand It

Choose Chablis Premier Cru Les Fourneaux. The 2023 bottle places a named Premier Cru designation beside the Domaine Louis Moreau name, between the broader Petit Chablis and Chablis wines and the Grand Cru Valmur. It offers a single named level within the range while keeping the domaine's Chardonnay planting in view.

Anecdote

In 1994, Louis Moreau formalized the independent Domaine Louis Moreau as the sixth generation of a Chablis winemaking family settled there since 1814. The vineyard holding expanded from 20 hectares to 50 hectares. The independent domaine carried the family name into a larger operation, with Chardonnay vineyards extending across the full Chablis appellation hierarchy.

Final Word

Domaine Louis Moreau keeps Chardonnay constant while its bottles move through four Chablis appellation levels. Stainless steel, wild yeast and extended ageing have shaped the cellar since 2014, with mineral characteristics and terroir personality ahead of oak influence.
