The Producer

At the dawn of his sixteenth birthday, Dominique Ferret took over the family estate with his wife Stéphanie. He is the current sixth generation proprietor of Domaine Guillaman, a family domaine based in Gondrin, in the Gers.

The domaine produces white wine under the IGP Côtes de Gascogne designation. Its work combines a clear regional address with practical environmental measures, while the named Colombard-Sauvignon cuvée carries the estate's focus on aromatic white wine.

Place

Gondrin lies in the Gers, in southwestern France. Domaine Guillaman's wines qualify for IGP Côtes de Gascogne, a Protected Geographical Indication rather than an AOC.

The vineyard soil is clay rich and rests on limestone bedrock. The climate combines oceanic influence on one side with the climate of the Pyrenees on the other, creating the hybrid setting described for the domaine.

Wines

Domaine Guillaman Colombard-Sauvignon is the named white cuvée. It carries the IGP Côtes de Gascogne designation and is made from 80% Colombard and 20% Sauvignon Blanc.

The cuvée is a fresh white with fruit led flavour and a balanced palate. Its style is lively, aromatic and crisp, with the two grape varieties defining the wine's range position.

In The Glass

The wine is pale yellow with green glints and a brilliantly clear appearance. The nose is very aromatic, intense and lively, with grapefruit, lychee, passionfruit and a hint of acacia. Citrus and exotic fruits dominate.

On the palate, it is well rounded and quite full, with powerful fruit forward flavours and good aromatic follow through. Tangy acidity gives the finish a crisp, lively line.

A Bottle To Understand It

The first bottle is Domaine Guillaman Colombard-Sauvignon. It is an IGP Côtes de Gascogne white made through night harvest, skin contact, low temperature fermentation and lees maturation.

Night harvesting brings the grapes into the cellar in cooler conditions. Skin contact allows the must to remain with the grape skins, low temperature fermentation helps protect volatile aromas, and lees maturation can add texture and roundness. The bottle places the regional designation and the cellar method together on one label.

Final Word

Domaine Guillaman joins a Gondrin white wine with measurable resource use. Its solar panels cover 75% of the domaine's energy consumption, while less than one litre of water is used to produce one litre of wine.
