Eòlic uses very gentle pressing to protect its aromas. Àrid Vins is a wine project working across three wine designations, each tied to a named place: DOQ Priorat, DO Penedès and DO Empordà. Eòlic is a Penedès Sauvignon Blanc made from grapes grown in the highlands around Pontons and aged on fine lees.
Place
Eòlic's grapes come from Pontons, a municipality in the Penedès highlands, at about 795 metres above sea level. At higher elevations, cooler growing conditions can slow ripening and help white grapes retain acidity. Eòlic pairs that elevated origin with Sauvignon Blanc under the DO Penedès designation.
Wines
Àrid Vins makes wines for three appellations, with Eòlic as its Penedès Sauvignon Blanc. Very gentle pressing protects the grape's aromas, then fine lees remain in contact with the wine for 2 to 3 months. That contact can broaden mouthfeel without covering the aromatic character of Sauvignon Blanc. Eòlic is 12.5% alcohol.
