The Producer
In 1859, Pere Olivella i Carol bought a hillside masia in the Penedès and planted the property to vines. He did not know he was founding a wine dynasty. He was acquiring a farm. Five generations later, the same masia, Masia Ca Pere del Maset, produces cava under his name.
The Cava DO is a large Spanish appellation for traditional-method sparkling wine, covering territories across Catalonia, Aragon, Rioja, and beyond, though its historical centre sits in the Penedès. Olivella Galimany is a Penedès estate producer: the grapes come from the hillside around the masia, not from contracted fruit across the appellation. The blend is the classical Cava trio of Macabeu, Xarel·lo, and Parellada. Farming is certified organic.
The estate is not a pure vineyard. Olive groves and Mediterranean pine forest grow alongside the vines on the hillside. The family treats the property as an integrated farm, with animals and trees sharing the land. That philosophy shapes how the vines are tended: no industrial monoculture, no broad-acre abstraction, but a working farm that happens to produce sparkling wine.
Place
The Penedès sits inland from Barcelona between the coastal range and the pre-Pyrenean foothills. It is warm and Mediterranean in summer, cooler at elevation, and dry enough that the native grape varieties, Macabeu, Xarel·lo, and Parellada, have evolved to hold acidity under those conditions. The three varieties divide naturally by altitude: Macabeu performs on the lower, warmer terrain; Xarel·lo occupies the middle slopes; Parellada grows best higher up, where nights are cooler and acid retention comes more easily.
The Cava DO classification that matters for Olivella Galimany is the Guarda system. Cava de Guarda requires a minimum of nine months on lees in bottle. Cava de Guarda Superior Reserva requires eighteen months. Cava de Guarda Superior Gran Reserva requires thirty months. The longer the wine rests on its spent yeast sediment, the more secondary character it develops: bread, hazelnut, brioche notes layered over the primary fruit. The tier name on the label is a direct guide to how long the wine aged before you opened it.
Soil And Site
The masia stands on a hilltop surrounded by vineyards, olive groves, and Mediterranean pine forest. The hillside setting moderates temperature and provides natural drainage. Specific soil type and elevation are not confirmed in the verified sources; the physical picture is a knoll of cultivated and forested land, integrated and farmed as a whole.
Story
Pere Olivella i Carol made his purchase in 1859. Over the following century and a half, five generations of the family worked the same hillside without relocating, selling, or breaking the estate apart. That continuity is unusual even in a region where family estates are the norm.
At some point the family committed to organic production. The certified organic status is confirmed; the specific date of conversion is not. What the decision changed is practical: no synthetic herbicides or pesticides in the vineyard, no shortcuts during difficult vintages, more time and labour per row. Combined with the farm-integration philosophy, the organic turn aligned the winemaking with the broader character of the property, a hillside that was always more than a vineyard.
The range architecture follows the Cava DO Guarda system, which since its introduction has allowed producers to signal ageing investment clearly on the label. Olivella Galimany uses all three tiers. The Guarda entry level carries the Brut Nature. The Superior tiers carry longer-aged wine. The bottle you choose tells you where in the ageing ladder you are.
Vineyards And Cellar
The estate vineyard is farmed by artisanal and traditional methods under organic certification. The grapes, Macabeu, Xarel·lo, and Parellada, are hand-tended on the hillside around the masia. No mechanised shortcuts are published for the vineyard work; the Catalan phrase in the source is explicit: the grapes are cultivated by hand, following traditional methods.
In the cellar, the production method is traditional method sparkling, the same process as Champagne: a base wine is bottled with yeast and sugar, refermentation occurs in the sealed bottle, the wine ages on its lees, and disgorgement removes the sediment before final closure. For the Brut Nature, the wine rests on lees for a minimum of twelve to eighteen months. Brut Nature means zero dosage: no sugar solution is added after disgorgement, so the wine goes to market with only its own character, unmodified by sweetness correction.
Wines
The range runs across three Cava DO tiers. The entry level is Cava de Guarda, which contains at least the Brut Nature and a Brut. The Brut Nature carries zero dosage; the Brut receives a small dosage to soften the finish. Both are made from Macabeu, Xarel·lo, and Parellada, and both age a minimum of twelve to eighteen months on lees before disgorgement.
The Cava de Guarda Superior Reserva requires a minimum of eighteen months on lees. At that ageing threshold, the secondary character from yeast contact becomes more noticeable: the bread and hazelnut notes that set aged cava apart from the fresh citrus of shorter elevage. The Cava de Guarda Superior Gran Reserva extends that ageing to thirty months minimum. Both Superior tiers are made from the same three Penedès grapes; the difference between them and the Guarda is time in bottle and the depth of secondary character that time builds.
Across the range, the wines are dry or bone dry: no excess sweetness, no residual sugar in the Brut Nature, and the dosage in the Brut kept modest. The style is classical Penedès cava, composed and unhurried rather than showy.
In The Glass
The Brut Nature opens pale yellow with greenish reflections and a very fine, persistent stream of small bubbles. The mousse is active and lively but not aggressive. On the nose, the primary character leads: clean apple and pear, white fruit that is direct and uncluttered. There is no oak character, no malolactic softness, no confected sweetness. The zero dosage keeps the palate focused: a clean, dry entry, a good mouthfeel built on twelve to eighteen months of lees contact, and a long, persistent finish where the light ageing notes, a hint of bread or fine yeast, settle in quietly behind the fruit.
The longer-aged Superior tiers build on that base. More time on lees brings more secondary aromatic complexity and a rounder mid-palate, though the three-grape foundation holds the same character underneath: Macabeu's softness, Xarel·lo's grip and texture, Parellada's aromatic lift.
A Bottle To Understand It
The Brut Nature is the right first bottle. It is zero dosage, made from Macabeu, Xarel·lo, and Parellada, aged twelve to eighteen months on lees, and carries nothing that the grapes and the time in bottle did not put there. Pale yellow in the glass, fine bubbles, apple and pear on the nose, a dry and focused palate, a long finish. No sugar correction, no softening. If you want to know what organic estate cava from the Penedès hillside tastes like without any additions, this is the bottle to open.
Anecdote
In 1859, a man named Pere Olivella i Carol bought a hillside property in the Penedès and called it Masia Ca Pere del Maset. He was a viticultor acquiring land, not a brand builder, and his name was attached to the masia as a matter of local convention rather than commercial calculation. The property passed from generation to generation without leaving the family: five generations worked the same hillside, tended the same olive groves and pine trees, farmed the same vines. Somewhere along the way the family began bottling their sparkling wine under that name, and the name on the bottle has stayed what it always was: the name of the man who bought the hill, the masia he named after himself, the same address where the grapes are still growing today.
Final Word
Olivella Galimany is a Penedès hillside estate that has been in one family for 167 years. The wines are organic, classically composed, and built on the three grapes that define the Cava DO. The Brut Nature is bone dry, carefully aged, and made from fruit grown on the same land the family has farmed since 1859. Start with that bottle.
