The design brief was explicit that the building would be young and innovative rather than traditional or typically family-owned. Phase I was sized for 30,000 bottles annually. The building does not look like it arrived from a long line of family wineries. That was the point. It was built as a new thing, whose appearance matches what happens inside it: a single-variety operation with no reference to a past it does not have.

The Producer

Place

Moravia, the eastern wine region of the Czech Republic, sits at a latitude where the growing season runs long and cool relative to the warmer wine zones further south and west. Story

Roman Fabig went to Spain for his wine education, working internships there before returning to Moravia. What he brought back was a working principle: that the producers he had found most compelling were not doing everything. They were concentrating on mastery of one thing. He applied that directly. When he bottled his first micro-batch in 2011, the label was Sauvignon Blanc. The question he set himself was not which varieties Moravia could support, but how far a single variety could go when the whole enterprise was organised around it.

He built a winery designed to hold that argument in concrete form. Rather than adopting the visual codes of established Moravian estates, he commissioned a building in minimal geometric shapes using steel, PUR panels and concrete. Phase I was sized for 30,000 bottles annually. Current production stands at 50,000 bottles, and the building is planned for eventual expansion to 100,000.

Vineyards And Cellar

Fabig farms organically, without synthetic treatments. The decision is practical rather than promotional: he describes it as logical thinking oriented toward lasting quality rather than responding to current trends. The vineyards supply Sauvignon Blanc for all tiers of the range.

In the cellar, the focus is on preserving acidity and developing the capacity for long aging. The range runs from the broader Sauvignon Blanc bottlings to SPECTRUM, a cuvée blended from the finest parcels.

The FABIG range is organised around Sauvignon Blanc at every level, with SPECTRUM at the top. SPECTRUM is a multi-parcel blend drawing from the winery's best vineyard plots, bottled at 12.5% alcohol with 7.6 g/l acidity and 2.3 g/l residual sugar. That residual sugar figure places it firmly in dry wine territory; the acidity is high enough to carry the wine through extended bottle age. The other Sauvignon Blanc bottlings form the broader base of the range, giving access to the house style before SPECTRUM.
