Soil And Site

The tasting notes for both the sparkling and still wines consistently reference mineral, chalky, and salty soil tones, which points to calcareous, limestone-rich ground across the estate's parcels. The Cal Ferrando vineyard, source of the Malvasia de Sitges for De Llevant, is the only named site in the confirmed record. The Piñol family started with a decision to farm differently. When U Més U Fan Tres launched in 2000, sustainable viticulture was the stated direction. The commitment moved through organic practice to formal certification, but the key early break came in 2014, when the family made one of the first cavas in the region without added sulfites. Sulfites are standard in sparkling wine production, used to prevent oxidation during secondary fermentation in bottle and the subsequent lees ageing. Removing them requires precise cellar hygiene, very healthy grapes, and a willingness to accept a shorter stability window on the finished wine. The third generation has kept the range under continuous development since: De Llevant, the still wine made from Malvasia de Sitges, introduces ceramic amphorae and a split production method that operates in a different register from the cava range entirely.

Vineyards And Cellar

The cava range is built on the classic Penedès trio of Xarel·lo, Macabeo, and Parellada, grown organically at 350 metres. Xarel·lo brings weight to the blend; Macabeo contributes floral lift and freshness; Parellada adds aromatic delicacy. The 1+1=3 Cava Brut uses 40% Xarel·lo, 35% Parellada, and 25% Macabeo. Cygnus Albireo spends 15 months on lees before disgorgement, which builds the subtle ageing notes in the finished wine without overwhelming the apple and white fruit character.

De Llevant is made from 100% Malvasia de Sitges from the Cal Ferrando vineyard, a grape variety native to the coast south of Barcelona that brings a naturally softer aromatic register. The cellar splits the harvest: 85% is fermented conventionally without skin contact, while 15% goes through orange wine maceration. Both portions then rest together in ceramic amphorae for three months. Amphorae neither add oak character nor strip oxygen exposure to zero; they allow very slow, graduated breathing, which integrates the conventional and skin-contact fractions and builds texture without obvious wood influence.

Wines

The range divides into three cavas and one still white, with each cava sitting at a different level of complexity and lees contact.

Cygnus Sador is the entry-level cava, priced under €15, with a honeyed profile and aromas of white peach, mandarin, and pear. It carries a softer, riper register than the mineral-driven Cava Brut, with delicate fruit at the centre rather than citrus and chalk.

The 1+1=3 Cava Brut, built from Xarel·lo, Parellada, and Macabeo at 40/35/25, is a sparkling wine with lemon, breadfruit, menthol, and lemongrass on the nose, with a full-bodied, focused palate and a long mineral finish showing chalky, salty soil tones. It is the crispest wine in the range.

Cygnus Albireo sits between the two: Xarel·lo, Macabeo, and Parellada at equal proportions, 15 months on lees, with clean apple and ripe white fruit aromas, a fresh and balanced palate, and subtle ageing notes from the extended contact time. The finish is long.

De Llevant is a different wine entirely. The Malvasia de Sitges grape and the amphora-and-split method produce a still white with a mineral, limestone-inflected profile. The skin-contact portion adds warmth and texture to what would otherwise be a conventionally fermented white. The 2025 Decanter World Wine Awards awarded it a Gold Medal and 95 points.

In The Glass

The cava range shares an altitude-driven acid line that keeps the wines clean and focused across all three expressions. Cygnus Sador opens with honeyed stone fruit, white peach and mandarin, and finishes with a light mousse and fresh acidity that prevents the fruit from reading as heavy.
