The producer

Louis Vallon began producing sparkling wine in 1995, when its Castillon facility made about 25,000 bottles. A larger unit now controls fermentation, bubble formation and ageing temperatures, while automated handling lays bottles down and later turns them upside down to gather yeast sediment in the neck. Légende de Louis Vallon Crémant de Bordeaux Brut spends 36 months ageing in bottle and carries apricot, hazelnut and brioche notes.

The Producer

Dominique Furlan is president of Cave Louis Vallon and vice-president of Bordeaux Families. Louis Vallon began making sparkling wine in 1995, when its Castillon facility produced about 25,000 bottles. By 2016, the Louis Vallon site was producing 400,000 bottles and had capacity for 800,000.

The cooperative acquired an 11,000-square-metre building in Sauveterre-de-Guyenne in 2019. The new production unit represented a total investment of €2 million and was inaugurated on 16 November 2023.

Fermentation at the facility is kept between 12°C and 14°C. The stage during which bubbles form in the sealed bottle remains at or below 14°C, while bottle ageing remains at or below 20°C. Automated equipment lays bottles horizontally while the bubbles form, then turns them upside down so natural-yeast sediment gathers in the neck.

Grapes are pressed at Saint-Pey-de-Castets. Bottling takes place at Saint-Romain-de-Vignague.

Wines

Légende de Louis Vallon Crémant de Bordeaux Brut spends 36 months ageing in bottle. It has a golden colour and fine bubbles, with apricot, hazelnut and brioche aromas. Developed red-berry and citrus flavours bring a biscuit hint and a long finish.

The wine is very fresh, moderately full and nearly dry. It is ready to drink and can also be stored further.
