Robert Mondavi Winery
At A Glance
Robert Mondavi Winery opened in 1966 in Oakville, Napa Valley, after Robert Mondavi left Charles Krug Winery in 1965. He built the new winery around To Kalon Vineyard, where Cabernet Sauvignon and Sauvignon Blanc became the central grape threads: one leads to Napa Cabernet and a selected-block Reserve, the other to the winery’s Fume Blanc.
The Producer
Robert Mondavi described the 1966 opening as Napa’s first major new winery since Prohibition. The estate’s defining decision was geographical rather than decorative: To Kalon Vineyard in Oakville became its heart, linking a named vineyard to Cabernet Sauvignon and Sauvignon Blanc. That link still helps decode the bottles. A Napa Valley Cabernet works from broader regional sourcing, while a To Kalon Reserve narrows the frame to selected vineyard blocks.
The company was sold to Constellation Brands in 2004 for $1.3 billion. The bottles remain easiest to read through the original Oakville focus: Cabernet carries the red-wine argument, while To Kalon Sauvignon Blanc supplies the white-wine line behind Fume Blanc.
Place
Oakville sits in Napa Valley, and To Kalon is located there in the valley’s centre. On the label, Napa Valley and To Kalon do different work. The 2021 Napa Valley Cabernet Sauvignon is a broader-sourced, open-knit Cabernet; the 2019 To Kalon Reserve comes from selected To Kalon blocks, concentrating attention on one vineyard relationship and a more compact red-wine shape.
That distinction matters more than a generic Napa shorthand. Cabernet Sauvignon is the red grape associated with To Kalon, but the site is also tied to Sauvignon Blanc. Fume Blanc is therefore not an unrelated white bottle: it is the Sauvignon Blanc branch of the same Oakville vineyard story.
Soil And Site
The supported site record names Oakville and To Kalon, but does not name a soil type, slope, elevation or drainage pattern. The useful site fact is scale. To Kalon is the winery’s vineyard centre, and the Reserve’s selected blocks make that centre more specific in the bottle; the Napa Valley Cabernet keeps a wider regional frame. The resulting contrast is one of source and structure, not a claim about undocumented ground.
Story
The winery began with a rupture. Mondavi left Charles Krug in 1965, established Robert Mondavi Winery the following year, and opened it in 1966. He selected To Kalon as the heart of the new estate and pursued wines shaped by origin, soil, climate and farming. Cabernet Sauvignon and Sauvignon Blanc gave that idea two working forms: Cabernet could move from Napa Valley breadth to a selected-block Reserve, while Sauvignon Blanc could become Fume Blanc.
Mondavi also changed the working conditions around the wine. Britannica credits him with introducing stainless-steel tanks for cold fermentation, restoring French oak barrels to the process, and opening the winery to tastings and public tours. Cold fermentation offered a controlled way to handle fresh white-wine fruit; French oak returned a source of spice, texture and weight for red wine. In 1979, he joined Baron Philippe de Rothschild to create Opus One, extending the Napa project through a Franco-American partnership.
Vineyards And Cellar
To Kalon supplies the estate’s central vineyard reference, but the Cabernet bottlings use it differently. The 2021 Napa Valley Cabernet is described as versatile and open-knit, a red made from broader Napa Valley sourcing. The 2019 To Kalon Reserve draws from selected vineyard blocks, so the fruit source becomes narrower before it reaches the cellar.
The Reserve then receives 100% new French oak. New barrels bring oak spice and a firmer frame around Cabernet fruit, adding body and tannin grip through the finish. Cold-fermentation tanks and French barrels belong to Mondavi’s longer cellar story; in the Reserve, the documented new-oak treatment is the clearest current example of how cellar material changes the finished wine.
Wines
The supported range has three useful threads. First comes Napa Valley Cabernet Sauvignon, represented here by the 2021: broader in source, open-knit in structure, and built for a more flexible Cabernet occasion. Its fruit, acidity and tannin are not asked to carry the same selected-block concentration as the Reserve.
Second is the 2019 To Kalon Reserve Cabernet Sauvignon, made from selected To Kalon blocks and aged in 100% new French oak. It is 97.5% Cabernet Sauvignon and 2.5% Petit Verdot. The vineyard focus and new oak move the wine toward greater weight, oak spice, tannin and a longer, more compact finish.
Third is Fume Blanc, the name connected with To Kalon Sauvignon Blanc. It keeps Sauvignon Blanc visible in a house often approached through Cabernet, and makes the range a two-grape Oakville proposition rather than a red-only story.
In The Glass
The Cabernet comparison starts on aroma. The Napa Valley wine’s open-knit shape lets Cabernet fruit arrive without the Reserve’s same selected-block concentration; on the palate, acidity keeps that fruit moving and tannin supplies the dry red-wine frame. Its body reads as more giving, with a finish shaped by fruit and Cabernet grip.
The To Kalon Reserve has a denser sequence. Cabernet fruit meets new-French-oak spice on the nose, then more weight and tannin on the palate. The oak is part of the wine’s texture rather than a background detail, and the finish stays dry, firm and longer. Fume Blanc belongs beside this comparison as a separate white-wine route: Sauvignon Blanc, not a lighter version of Cabernet.
A Bottle To Understand It
Start with the 2021 Napa Valley Cabernet Sauvignon. It is the more open-knit Cabernet in the documented comparison, so its fruit, acidity, body and tannin are easier to meet before the selected-block scale and new-oak weight of the To Kalon Reserve. The wine offers a dry Cabernet frame with fruit at the centre and tannin carrying the finish. It also makes the label hierarchy legible: Napa Valley first, then To Kalon when the bottle calls for a tighter vineyard focus.
Anecdote
In 1965, Robert Mondavi left Charles Krug Winery. The following year he established Robert Mondavi Winery and opened the new Oakville estate in 1966, calling it Napa’s first major new winery since Prohibition. For the new project he selected To Kalon Vineyard as the winery’s heart. That choice set Cabernet Sauvignon and Sauvignon Blanc beside one another at the centre of the estate: Cabernet would become the red-wine route from Napa Valley bottlings to a To Kalon Reserve, while To Kalon Sauvignon Blanc would be connected with Fume Blanc. The winery stood on St. Helena Highway in Oakville, with the vineyard decision already built into its first address.
Final Word
Robert Mondavi Winery is most useful when read bottle by bottle: Oakville and To Kalon establish the place, Cabernet and Sauvignon Blanc establish the grapes, and Napa Valley versus selected To Kalon blocks explains why the red wines carry different weight, tannin and oak.
