The effort lasted for years, with García personally involved as the local group pressed its case. In 1992, a decision by Spain’s Supreme Court gave Requena authorization to produce Cava. Pago de Tharsys says García became known as the father of Valencian Cava for his role in driving that campaign. The estate now makes its long-aged organic Cavas in Requena, with bottles ageing in the underground winery that dates to 1808.
