The story

The January Harvest

In January 2023, Oakvale hand picked Pinot Noir and Chardonnay from newly established vineyards during the cool morning hours to preserve freshness. The grapes were whole bunch pressed, and the must was clarified by flotation before each cultivar fermented separately. Malolactic fermentation took place in tanks. The base wines then moved into bottle for secondary fermentation, with a Brut style Pinot Noir and Chardonnay blend and a Pinot Noir rosé bottled in December 2023. The harvest connected newly established vines to Oakvale's Cap Classique range.
