Marinette Garnier creates hand made wines as Jaffelin's oenologist-winemaker. The house began in 1816, when the Jaffelin brothers founded a wine merchant house.
Jaffelin's vat room was completely renovated in 2004 and fitted with equipment for closely controlled work. A vertical press with a capacity of 5 hectolitres is used for small cuvées. Red wines use oval shaped wooden vats, while white wines use stainless steel vats. The wines age for 10 to 18 months in French oak barrels in cellars where temperature and humidity are regulated naturally.

Jaffelin vinifies and ages its wines in the historic center of Beaune, inside the 12th century cellars of the Chapitre de Notre Dame. The cellars once housed the wines of the Collegiate Church and the princes of the Church. Today they hold the production of a Burgundy wine merchant house in the middle of the town.
Wines
The named range includes Bourgogne Pinot Noir Les Chapitres de Jaffelin, Bourgogne Chardonnay Les Chapitres de Jaffelin and Jaffelin Brouilly. The first is a red Bourgogne from the 2022 vintage, the second a white Bourgogne from 2020, and the third a Beaujolais red from 2020.
