Buying The Buffer Zones
Over the years, Thierry Michon bought buffer zones around Domaine Saint Nicolas to keep chemical products used by nearby vineyards from seeping into his land. The purchases placed extra ground between the domaine's vines and neighboring treatments. Soil care is a priority for Michon because it allows the vines to fully express themselves, so the boundary around the vineyards became part of the farming work. The decision was practical and repeated over time: land purchase protected the ground where the domaine farmed.

The Producer

He leads Domaine Saint Nicolas in Brem-sur-Mer, where Antoine handles production in the cellar and vineyard and Mickaël works on permaculture and establishing a farm among the vines. Soil care is a priority for Michon. Wines ferment spontaneously because he believes cultured yeast changes their taste. Sulfites are used minimally, and the wines are neither fined nor filtered.

Brem-sur-Mer is the domaine's home in the Fiefs Vendéens, a Loire setting where the local wine community has contracted sharply. More than 100 vignerons once lived here; the Michon family is now the only family remaining.
