Habilis brings together Grenache, Syrah and Carignan. Sapiens presents an ample, dense palate with powerful yet refined tannins. Omega Sapiens receives élevage in foudres and carries a longer ageing window, with the wine ready to drink now and developing through 2029.
Place
Terrasses du Larzac is the AOC appellation carried by these wines in France. Its cultivated area covers 700 hectares, with 73% following organic farming specifications. An AOC sets the geographic and production framework for the name printed on the label.
The appellation gained recognition at the end of the 1990s. Its scale brings together private wineries, cooperative wineries and wine merchants under one regional name, while the bottles retain their separate cuvée identities.
Vineyards And Cellar
The clearest cellar detail is Omega Sapiens's élevage in foudres, large wooden vessels used to mature wine. Slow oxygen exchange during ageing can soften tannins and allow wood derived aromas to develop gradually. In Omega Sapiens, toasted notes accompany preserved black and red fruit, spices and menthol.

A Bottle To Understand It
Open Habilis 2019 first. It is a Terrasses du Larzac red made from 55% Grenache, 25% Syrah and 20% Carignan, giving the bottle a clear three grape composition. Grenache brings roundness and Syrah provides the structural framework in the blend.
The palate is supple and velvety, with juicy, meaty character and a fresh finish. Fine, crisp tannins lead into paprika at the close.
