The story
The 1976 Decision
When the Crémant d'Alsace AOC was established in 1976, it closed off the simple carbonation method that had been used for cheaper sparkling wines and required bottle fermentation, nine months minimum on lees, and disgorgement as the price of using the Crémant name. For a small family estate in the Haut-Rhin, the new rules created a working-capital problem alongside the production one: bottles aging on lees for nine months occupied cellar space and locked up inventory that could not be sold until the disgorgement process completed. Domaine Fernand Engel committed to the requirements and built the Crémant into the front of its range. The nine months those bottles spend horizontal on their lees — absorbing the savoury, bread-crust character of the spent yeast cells — account directly for the toasted note running beneath the orchard fruit in every finished glass.
