Lionel Faury on Water

Lionel Faury stands six foot five and has won his tenth Joutes Nautiques, the French championship of water jousting. He is soft spoken, humble and good humored. In the vineyards, warmer growing seasons have led him to keep more leaves on the vines, giving the grapes more shade. In the cellar, he uses shorter macerations and more whole cluster fermentation to preserve freshness and acidity. He brings those choices into the work at Domaine Faury.
