The story
Boissac Chooses Gravity
In 1870, Boissac directed Château Malescot Saint-Exupéry's move to gravity during fermentation. The property became the first Bordeaux winery to use the method. Gravity lets must move downward through the cellar by height, reducing the need for mechanical pumping and limiting handling during fermentation. In the same period, Boissac designed and built the classical château still used by the property. The method belongs to the estate's 1870 history, while the building remains in use.
