When Xavier Planty made Château Guiraud's case for organic certification in the late 2000s, he was arguing against the appellation's established logic. Sauternes depends on noble rot, which is a fungal infection; most producers maintained that preventing gray rot while allowing Botrytis cinerea to spread required fungicide tools that organic farming prohibits. Planty's response was practical: careful parcel-by-parcel observation, multiple picking passes timed by the team rather than a chemical schedule, and the estate's 35 hectares of woodland, which held overnight moisture and fed the clean morning fog across the vines. The certification came through in 2011. Guiraud became the first Premier Cru Classé in Sauternes to farm entirely without synthetic inputs, and Planty — who had arrived at the estate as a young oenologist in the early 1980s — remained its director.
