The Producer
Champagne Piot-Sévillano is a family Champagne house based in Vincelles. Its winemaking line reaches ten generations and dates to 1700. The house works with Meunier, Pinot Noir, and Chardonnay across blended Champagnes, rosé, and single varietal cuvées.
Brut Tradition brings the three grapes together. Impertinente, Provocante, and Rebelle isolate Pinot Noir, Meunier, and Chardonnay respectively. The range keeps the grape varieties visible in the names and compositions of the wines.
Place
Vincelles lies in the Marne Valley, 3 kilometers from Dormans and approximately 25 kilometers from both Epernay and Reims. The village places the house within one defined Champagne valley, while its wines shift between Meunier, Pinot Noir, and Chardonnay in blended and single varietal forms.
Story
Christine Sévillano worked as a journalist before moving into the family business. In 2007, her parents transferred operations to their daughter. After that handover, the vineyard expanded from 3 to 8 hectares, and production volume reached 60,000 bottles. HVE certification arrived in early 2015, followed by Organic Agriculture certification in 2023 after a four year conversion. The range now includes blended Champagne, rosé, and single varietal cuvées.
Vineyards And Cellar
The vineyard is certified High Environmental Value, obtained in early 2015, and Organic Agriculture certification followed in 2023 after a four year conversion. Organic certification describes a regulated farming system, while HVE records environmental standards at the holding.
The cuvées are defined in the available wine descriptions by grape composition and tasting character. Lees ageing, dosage levels, fermentation vessels, and yeast strains are not specified.
Wines
Brut Tradition is the entry level cuvée, made from 70% Meunier, 15% Pinot Noir, and 15% Chardonnay. Brut Rosé shifts the proportions to 60% Meunier, 25% Pinot Noir, and 15% Chardonnay.
The single varietal range separates the three grapes. Impertinente is 100% Pinot Noir, Provocante is 100% Meunier, and Rebelle is 100% Chardonnay. Provocante includes 50% first press cuvée from vines more than 25 years old. The range moves from blended Champagne to rosé and wines centred on one grape.
In The Glass
Brut Tradition is full and lively, with floral and acidulous fruit flavours and persistent aromas. Brut Rosé brings tangy, slightly spicy red berries and a rich finish.
Impertinente shows violets and red berries on the nose, followed by raspberry and Morello cherry on the palate. Its finish has real flesh and lasting aromatic stability. Provocante carries ripe quince and Rousselet pear with a fusion of white fruit and citrus notes, while Rebelle brings delicate minerality, flowers, white fruit, and a cool finish.
A Bottle To Understand It
Choose Brut Tradition. As the entry level cuvée, it puts Meunier, Pinot Noir, and Chardonnay into one bottle before Impertinente, Provocante, and Rebelle narrow the range to one grape each. It gives the blended starting point for the house, with Brut Rosé changing the colour and the single varietal wines changing the grape focus.
Anecdote
In 1954, regional growers were facing hardship when Alexis Piot and his wife Jeannine moved from grape cultivation to making Champagne at home. Their first wine was Brut Tradition. They produced 500 bottles in the inaugural year and sold every one. The cuvée remains in the range today as the entry level Brut Tradition, alongside Brut Rosé and the single varietal wines Impertinente, Provocante, and Rebelle.
