Celles-sur-Ource lies in the Côte des Bar, in the Aube area of Champagne. The continental climate gives the growing season a clear seasonal rhythm, while the Champagne method turns still base wine into sparkling wine through a second fermentation in bottle. Reserve wines help maintain continuity across blended cuvées when harvest conditions change.

Wines

Brut Tradition is the flagship cuvée, blending Pinot Noir and Chardonnay with reserve wines. Blanc de Blancs is the 100% Chardonnay branch of the range. Rosé de Saignée adds an intensely coloured rosé style. Extra Brut is the lower dosage cuvée, balancing power with delicacy. Millésime 2008 is an Extra Brut vintage wine with a pale yellow crystalline colour. Cuvée des Gentlemen is the prestige cuvée, made with subtle dosage and a balance of maturity, refinement and dynamism.

Blanc de Blancs brings aromas of white flowers and white fruit, followed by a fine, delicate palate and good length. Rosé de Saignée has an intense pink colour, with fruit and sweet flavours inside a bold profile. Millésime 2008 is pale yellow and crystalline, with a complex character. Brut Tradition is fruity and energetic, while Extra Brut combines power with delicacy.

A Bottle To Understand It

Brut Tradition is the first bottle to open for the house's central blend. It contains 70% Pinot Noir and 30% Chardonnay, with reserve wines aged for 15 years. The Pinot Noir and Chardonnay are assembled with reserve wines into the signature cuvée, giving one bottle the house's main grape pairing and its long reserve tradition.
