Wines

The range separates a mixed grape Brut from Blanc de Blancs bottlings. Brut Tradition is made from 50% Chardonnay, 25% Pinot Noir and 25% Pinot Meunier. Brut Réserve Blanc de Blancs is made from 100% Chardonnay Grand Cru from the Côte des Blancs. Grand Cru Extra Brut Blanc de Blancs is also part of the range.

Brut Tradition has intense, slightly steely Chardonnay flavors, discreet Pinot Noir notes, lightness and fruitiness. Brut Réserve Blanc de Blancs shows subtle Chardonnay aromas with floral notes and a light feel. It pairs with white fish in lemony sauce or scallops with citrus fruit.

Bottles begin secondary fermentation approximately 6 to 8 months after harvest. Non vintage Champagnes mature on lees for 2 to 3 years, while vintage Champagnes mature for 5 years. Lees are spent yeast cells, and extended contact can add texture and soften the bubbles.
