The Producer
Cavit is short for Cantina Viticoltori del Trentino, a cooperative group built from Trentino wineries and associated winegrowers. The group combines technical service for its members with a commercial wine operation, reaching from member vineyards to finished bottles. Cavit also collaborates with the San Michele all’Adige Agricultural Institute, also known as the Edmund Mach Foundation, and other Italian wine research centres.
Place
Dry air moves through Trentino's vineyards as the Ora del Garda, a balmy breeze from nearby Lake Garda. It protects fruit from moisture and disease, while cool evenings encourage aromatic and flavour development in the grapes. Terrazze della Luna's white is Trentino, while the rosato is Vigneti delle Dolomiti IGP. The regional names separate the two styles on the label.
Soil And Site
Hillside vineyard sites in Valle dell'Adige have ventilated, well drained soils. The Terrazze della Luna white carries a rounded mineral character from these conditions.
Story
Fabrizio Marinconz joined Cavit in late 2006 as a vineyard technician and worked with chief winemaker Anselmo Martini. Cavit then gave him the position of Associate Winemaker, moving his work from vineyard operations into production. Marinconz took responsibility for all Cavit still wines. Martini retired in 2020, and Marinconz remains responsible for the still wine production. The cooperative's still wines now have a named production lead.
Vineyards And Cellar
Across the cooperative network, Cavit limits pesticide use and farms with cover crops, sustainable pest control and natural fertilizers. The cellar work starts with raw material from associated wineries. Cavit gathers, inspects and selects it, then controls production from maturation through bottling.
The Terrazze della Luna white is pneumatically pressed and fermented in stainless steel tanks at 20 degrees. For the rosato, crushed grapes and skins undergo five to six hours of cold maceration without air before pneumatic pressing and fermentation in stainless steel at around 18 degrees. The short skin contact extracts aroma and colour, while stainless steel leaves the fermentation vessel neutral.
Wines
Terrazze della Luna is the line for a white Pinot Grigio and a Pinot Grigio Rosato. The white combines Pinot Grigio and Chardonnay. The Maso line is associated with defined terroirs, so named growing places are part of how those bottles are presented. Vino Santo Trentino DOC and sparkling wines fermented in the bottle occupy separate styles within the portfolio.
In The Glass
The Terrazze della Luna Pinot Grigio opens with stone fruit and apple. On the palate, green apple leads into fresh lemon acidity on the finish. The Terrazze della Luna Pinot Grigio Rosato opens with marzipan and candied fruit, alongside strawberry, wild strawberry, raspberry, red apple and chalky aromas. It is dry and just under medium bodied, with intense acidity, a tart berry finish and some astringency.
A Bottle To Understand It
Choose the Terrazze della Luna Pinot Grigio. It is the white bottle in the line, with 85% Pinot Grigio and 15% Chardonnay. Its palate carries delicate floral notes. The rosato is a different colour and style, while the Maso line is associated with named growing places. The white puts that blend at the front of Cavit's regional still wine range.
Anecdote
In the 1970s, Cavit promoted Pinot Grigio in the United States when the variety was little known there. The move put the cooperative on the radar of American wine lovers, and Cavit became a pioneer of that white wine. Pinot Grigio now appears in the Terrazze della Luna white, blended with Chardonnay. The grape name Cavit promoted then remains on a Cavit bottle today.
