Water comes from river-bed sources in the Sefuri-Tensan mountain area, a range of peaks that forms the natural boundary between Saga and Fukuoka prefectures to the north. River-bed water filtered through mountain geology is softer and lower in minerals than municipal sources, and breweries across Japan have long sought it for the clean, neutral base it gives fermentation.
